2 and 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 cup pitted dates
1 cup boiling water
1 cup coconut oil
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
2 Tablespoons Apple juice
3 cups peeled chopped apples (1/2-inch chunks, about 2–3 large apples) + 1 cup sliced apples ( for topping)

SPICY TUNA 🍣 CRISPY SUSHI

Ingredients:
* Sushi rice
* Rice vinegar
* White sugar
* Tuna / salmon sashimi
* Spicy mayo (kewpie mayo, sriracha, sesame oil)
* Soy sauce
* Green onion
* Optional: wasabi, sweet chilli sauce, black sesame, thinly sliced jalapeño, avocado

Directions:
1. Wash and cook the rice, the rice needs 4 hours in the fridge to fully cool. Do this before hand.
2. Dissolve the white sugar in the rice vinegar & slowly fold into the rice
3. Add the rice to a shallow dish lined with cling wrap and press down to ensure it is compact. Put in fridge for several hours.
4. Chop up the tuna or salmon, add spicy mayo, soy sauce, sweet chilli & green onion. Mix & refrigerate
5. Cut the rice into desired shape and lightly fry until all sides are crispy
6. Top with wasabi, avocado, tuna mixture and top with black sesame
7. ENJOY!

🍆 Eggplants roll ups 🍅
Great carb free dinner or appetizer!

Eggplant:
-Wash, peel, cut & salt eggplant
-brush with olive oil and bake

Sauce:
-onions, garlic, chilli
-eggplant (pieces that aren’t ‘perfect’ for the roll)
-tomatoes (remove skin)
-basil
-mushroom

Filling:
-ricotta
-spices
-Parmesan cheese
-shredded chicken

Line tray with half the sauce, place filling in eggplant & roll, cover eggplants with remaining sauce & bake

🧀 Hint: if you love cheese, topping this with low-fat mozzarella would be the perfect addition. (I’m not a cheesy gal)

IRAQI FESENJOUN 🇮🇶

Super simple & quick way to make chocolate covered strawberries! Just add warm milk/ cream to chocolate chips and dip your clean, dry fruit into it.

Tender mustard chicken 🍗

Fry spiced Chicken in one or two tablespoon oil until reddish.
Lightly Fry slices of onions, mushrooms and broccoli
Sauce:
3 cups chicken stock
2 tbsp cornstarch diluted in 1/2 cup water
1 tbsp mustard
1 tbsp sweet paprika
1 cup cooking cream
Mix all sauce ingredients cold and add to chicken, onions and mushrooms.
Bake at 350 degrees- timing depends on how thick chicken is cut, but cook for 15 minutes then flip and finish with another 15 (or more if thicker)

Here are all my favourite upper body exercises!
To start off, we start with a squat, push variation It’s very fun to do and it’s really one of my favourite cool down or warm up exercises.

Then we have a normal bicep curl, boring I know, but it’s always very effective.

After that we have a cable pulley chest incline press, which is really fun to do!

Next we have your basic row machine and then your pulldown machine also very effective

In addition we were my favourites and really good for your back and your posture development

And finally, for those who have imbalance problems, which means one arm is stronger than the other. We have the one arm high row plated machine

TEXMEX EGGROLLS
These were 👩‍🍳💋 & you know we tried to keep the protein as high as possible

-cream cheese
-jalapeño
-cilantro
-shredded chicken breast (I simmered mine in tomato & fajita sauce)
-low fat shredded cheese
-corn
-black beans
-egg roll wrappers

I wrapped mine straight (as opposed to diagonal) because I felt like I could stuff more in them this way, but wrap them how you like.

Normally, I would airfry these but don’t currently have access to one, so I lightly fried them in a pan and then finished them off in the oven & they turned out immaculate! Just make sure to turn them over if you’re using the oven so one side doesn’t get soggy.

🍎 APPLE CHIPS 🍏
Crispy, fulfilling snack that you can make at home!
Simple syrup (you’ll have some leftover):
-1/2 cup sugar
-1/2 cup water
Bring to a boil and drop thinly sliced apples.
Remove apples and let drain on paper towel before moving to baking tray lined with parchment paper. Bake at 250 for 2 hours.

CHICKEN EGGROLL 🍗🌯
Fried some, baked some. They’re super versatile and macro friendly (depending which route you take 🙂)

210g shredded carrots
Soak bean thread noodle in hot water
280g diced white onion
80g green onion
30g minced garlic
300g cabbage/ coleslaw
Strain noodle, remove all water
3 tsp ginger paste
40g fish sauce
5g sesame oil
1 tbsp black pepper
3 tbsp Tom you paste
4 tbsp white sugar
Handful chopped parsley
Cut up bean noodle & add to mixture
1 kg ground chicken
1 chicken bouillon cube (optional)

One of my favourite renditions of tiramisu is MANGO 🥭 it’s really easy to make too

You’ll need:
-mascarpone
-powdered sugar
-vanilla
-whipped cream
-mango juice
-lady fingers
-sliced mango

Set 1 & 2: warmup- 65 lb
Set 3 & 4: 95 lb
Set 5 & 6: 135 lb
Set 7 & 8: 185 lb
Set 9 & 10: cooldown- 65 lb

2. BULGARIAN SPLIT SQUAT
15 lb dumbbell each hand
10 reps each leg x 3 sets

3. SINGLE LEG RDL- bosu ball
15 lb dumbbell one hand
10 reps each leg x 3 sets

If you’re still up for it; finish off with cardio and abs😋
